Elote Inspired Corn DIp
Ingredients
1/2 cup chopped onion
2 ears of corn
8 oz cream cheese
8 oz sour cream
1/3 cup mayonnaise
1 1/2 tablespoons smoke paprika
1/2 tablespoon of chipotle power
1/4 cup chopped chile peppers in adobo
10 oz can Hatch tomatoes and green chiles
2 teaspoons pepper
2 teaspoons garlic salt
1/2 cup cotija cheese
1 cup Monterey Jack (for the dip)
1/2 cup Monterey Jack (reserve for baking)
1 teaspoon of tajin (add more if desired)
Directions
Sauté the onion for 5 mins. Mix in corn, can of tomatoes and green chiles. Add the paprika, pepper, garlic salt and chipotle powder. Cook for another 5 minutes
Add cream cheese and mix until softened then add sour cream, mayonnaise and chopped chipotle peppers
Add Monterey Jack cheese and combine until the dip is creamy
Add the remaining Monterey Jack cheese and transfer to a baking dish or put your pan in the oven if it’s oven safe. Broil for 5-7 minutes, until the cheese is bubbly on top
Remove from the oven and add the cotija cheese and tajin over top before serving.
