Spicy Ricotta Pasta

This is a quick, 20 minute pasta that you can whip up on a weeknight with only a few ingredients and minimal tools. All you need is a pot to boil your pasta and a blender for the sauce.

Ingredients:

  • 15 oz ricotta 

  • 1 cup cherry tomatoes 

  • 1/4 cup of sun-dried tomatoes or 3 tbsp of Calabrian chile paste (add a jalepeno if you don’t have Calabrian chiles) 

  • 2 cup Parmesan cheese 

  • 4-5 basil leaves 

  • 2 cloves of garlic 

  • 1 tablespoon garlic paste

  • 1 tablespoon tomato paste 

  • 1 tablespoon pepper 

  • 1 tablespoon garlic powder 

Directions: 

  1. Start boiling your water for the pasts.

  2. Add all ingredients (besides the pasta) to a blender and blend until smooth. 

  3. Cook pasta per instructions and reserve 1 cup of pasta water 

  4. Drain pasta, add the sauce from the blender and add pasta water a quarter cup at a time to thin the sauce to your liking. 

  5. Top with Parmesan, more basil and pepper if you’d like more.
