Potato & Chorizo Quesadillas

This recipe is from Cooking Con Claudia and it was the perfect mix of spicy, cheesy and crunchy. It was a fun meal to make and I’ll be trying more of Claudia’s recipes!

I’ve linked her recipe for the quesadillas and the rice and copied the ingredients below as well.

Quesadilla Ingredients: 12-16 quesadillas

12 oz queso Oaxaca or monetary jack

5 small potatoes or 3 large ones

8-12 oz chorizo

1/4 onion; finely chopped

1 Roma tomatoes; small diced

3 chile chipotle in adobo sauce;finely chopped

1 tbsp coarse salt and Black Pepper to taste

Mexican Rice Ingredients

1/4 cup avocado oil

1 1/2 white long grain rice or you Jasmine

1/4 small diced onion

2 small diced Roma tomatoes without seeds

1 minced garlic clove

3 cups water

1 tbsp tomato paste

1 tbsp chicken bouillon

1 tbsp tomato bouillon

1 tsp onion powder

1 tsp garlic powder

1/2 tsp ground cumin
